Mum's festive mince pies

Hello everyone, today I thought I would share with you my mum's festive mince pie recipe. Its so simple and easy to make and makes around 20 mince pies. 

4 Oz butter 
8Oz self raising flour 
3 tsps caster sugar
1 egg yolk
icing sugar

Method-for the pastry- First sift the flour into a large bowl and add the butter. Begin chopping u the butter into little pieces and then move onto using your fingertips to create breadcrumbs. 

once the butter and flour have formed breadcrumbs add thee sugar and egg yolk and mix with a knife. You can now begin to add small drops of water into the mixture until a ball of dough is created.

Now you use a rolling pin to roll out the dough and use a medium sized circular cookie cutter to cut the dough. however, before placing the dough into the tray make sure you grease the tray using  sunflower oil, you could substitute this for butter or even coconut oil. 

Now place the pastry circles into the tray and fill the pastry with the a teaspoon of mincemeat. If you dont like mincemeat, maybe try strawberry jam instead. Now place a small pastry star on top of the mincemeat. 

Now put them in the oven at gas mark 5 and cook until golden brown.
