Traditional Victoria Sponge with a Twist Recipe...

Hello everyone, 

A couple of weeks ago it was my Nanny's birthday and I actually made her birthday cake. I was so happy with how it turned out, so I thought I would share with you how I made it. I really hope you enjoy these baking posts, I absolutely love the whole process, from baking to taking photos to eating it and blogging about it. 

Ingredients- For the cake
-Butter
-Caster Sugar 
-5 eggs
-Self Raising flour 

For the Decoration
-Icing Sugar
-Butter
-Milk
-Yellow Food Colouring 
-Sprinkles
-Cake Topper


For the Cake 
  1. Begin by adding the butter and sugar to a bowl and cream together.
  2. Once the butter is lighter in colour and lighter in texture, add the two eggs and whisk again.
  3. Now add the flour to the mixture and fold in. 
  4. Pop the cake mixture into a circular baking tin and bake for around 15-20 minutes at gas mark 6/ 200 degrees c. You will need 4 layers of cake.
  5. Once the cakes are golden brown on top, leave to rest until they are cool.
For the Decoration
  1. Whilst the cakes are cooling, add the icing sugar and butter into the bowl and whisk until light and fluffy..
  2. Add the yellow food colouring, making sure the colours are bright as when they are mixed together.
  3. Once the cakes are cool, add a little strawberry jam on top of the first layer and then pipe around the perimeter of the cake with a circular nozzle on the piping bag.
  4. Now add the next layer of cake gently on top of the other and repeat the jam and icing.
  5. Once you get to the last layer of cake, make sure to not add any jam and pipe all across the top of the cake.
  6. Now add the sprinkles and the cake topper and you have the finished cake.
